Chipotle (chee-POT-lay) Chiles are smoked Jalapeno peppers. Chipotle means, “smoked chile”, and the process of smoking chiles dates back to the Aztecs who smoked these thick fleshed chiles because they were difficult to dry and prone to rot. There are many different beliefs regarding the difference between Brown and Morita Chipotle. One understanding is that the Brown Chipotle is the green Jalapeno and the Morita is the red, fully mature Chipotle. The Jalapeno is first smoked for an extended period of time and then dried, giving it a unique smoky flavor, which is popular in many Southwestern dishes. These peppers run about 2-4 inches in length and have a deep reddish brown color. Our Morita Chipotle Chiles are de-stemmed. Approx Scoville heat units 5,000-10,000.

Chipotle chiles are made from the familiar jalapeno pepper. Jalapeno chiles are smoked during the drying process. There are many different beliefs regarding the difference between brown and morita chipotles. One understanding is that the brown chipotles are the green jalapenos and the moritas are the red, fully mature chipotles. Fully ripening gives these morita chiles a unique, medium hot, smoky flavor which is popular in many southwestern dishes.

Recommended Preparation Instructions:
Rinse product first with warm water. Soak in hot water for 10 minutes to rehydrate or add directly to recipe that will cook at least 10 minutes. Once rehydrated, dice or puree and add to a recipe.
