Description:
This Mexican yellow bean is medium sized and oval-shaped. Mayocoba Beans are common in Latin American cooking. The Mayocoba is ivory-yellow in color and is similar to a pinto bean in looks and flavor. Very mild tasting with a buttery taste and smooth texture, this bean may be used as an ingredient in soups, salads and Latino dishes. The Mayocoba is also known as the Maicoba bean, Azufrado bean, Canary bean, Mexican Yellow bean, and Peruvian bean.

Product Description
The Mayacoba, or Canary Bean, was named after a small village in Mexico where this new version of an old Incan food product was re-invented. They have a unique taste and it is said that they will not give the consumer the usual digestive reaction that other beans can give. Mayacoba Beans are yellow and about the size of a pinto bean. Try to use them as a substitute for Pinto Beans.

Suggested Use:
The Mayocoba Bean may be used in any dish that needs a mellow bean flavor. It is great for absorbing surrounding flavors in the dish. Cook and mix with rice, purée Mayocoba beans and use in soups or cooked them and sprinkle in salads or use as a marinated bean salad.
Recommended Preparation Instructions:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, reduce heat and simmer, covered, for 45 minutes until tender. One cup dry yields 2½ cups cooked.
