Description:
Pebble Beans... When viewing the picture, the variety of colors would make you think they were a collection of different beans. This isn't the case with the Pebble Bean. The variety of colors and sizes all come from one plant! These beans are meaty and plump with a thin skin and medium flavor. Easy to use in chili and southwest style cuisine they may also be used for salads.
The Pebble Bean was discovered by a farmer on his farm near Thornton, CA several years ago. The farmer was amazed that this one plant had literally 30 different colored and patterned beans on the same plant.
Ingredient Statement:
Pebble Beans.

Recommended Preparation Instructions:
Soak beans in lots of cold water overnight, or use the quick-soak method by placing beans in a pot and adding water to cover by a few inches. Bring to a boil over high heat, then remove from the heat and let soak for one hour. Drain and rinse either overnight-soaked or quick-soaked beans. Return to pot and cover with several inches of cold water and a pinch of salt. Bring to a boil over high heat, then reduce heat to medium and simmer for 40 minutes until tender. One cup dry yields 2½ cups cooked.
