Black Turtle Beans are a favorite in Southern Mexico, South America and the Caribbean. They are related to the Kidney Bean and are also knows as Black Beans. Black Turtle Beans are small, black and shaped similar to a kidney bean but more plump, with a square look to them. With a soft floury texture and rich, mushroom like flavor, these Black Beans hold their shape when cooked and absorb accompanying flavors well. Native to South America, Black Turtle Beans are a significant ingredient in Brazilian and Cuban dishes. About 5/16 of an inch long, Black Turtle Beans will bleed color out and make the whole pot dark. You can lessen this by not pre-soaking them.

Suggested Use:

Black Turtle Beans have a rich mushroom like flavor that is particularly good in soups, such as Cuban Black Bean soup. Try them in frijoles, burritos and chili. Black Turtle Beans yield 2 ¼ cups for every 1 cup dried.

Recommended Preparation Instructions:

Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring water to a boil for 3 minutes, reduce heat and simmer, covered, for 60 minutes until tender. One cup dry yields 2-1/4 cups cooked. Salt the water to your desired liking.
