New Mexico Chiles are popular in Red Mexican or Southwestern cooking. The New Mexico Chile has a thin flesh with an earthy chile flavor and wild cherry undertones! Dark brown with a touch of maroon in color, the New Mexico Chile is about 5 – 7 inches high and about 1 ½ inches wide. Elongated and tapered, they are the dried form of the Red Anaheim Pepper. Also referred to as the California Chile or Chile Colorado. Mildly hot, this chili is used to make Ristras. Scoville heat units are 8,000 - 12,000. Our New Mexico Chiles are in 1/8 inch diced pieces.

New Mexico Chiles are dark brownish - maroon in color, about 5 to 7 high and 1-1/2 wide. New Mexico Chiles are elongated, tapered, and the dried form of the Red Anaheim Pepper. This Chile has a thin flesh with an earthy Chile flavor and undertones of wild cherries. This Chile ranges from 2-4 on a heat scale of 1 to 10. The New Mexico Chile may be referred to as the California Chile or Chile Colorado. New Mexico Chiles are commonly used in Red Mexican or Southwestern Sauces and is grown in Mexico. New Mexico Chiles are mildly hot and very popular in Southwest cooking. Great in sauces, salsa, rice dishes, stews and soups. Add directly to the cooking liquid along with other spices, use in stir fry, or add to chicken or fish marinades. Diced for your convenience to aid with prep time in the kitchen!
Recommended Preparation Instructions:
Rinse product first with warm water. Soak in hot water for 10 minutes to rehydrate or add directly to recipe that will cook at least 10 minutes. To release more flavor, roast in a 250° degree oven for 3-4 minutes.
