The Pasilla (Pa-see-ya) Negro is a traditional chile used in both Southwestern and American dishes. Richly colored like an Eggplant or a Raisin, this thin-fleshed chile has an offbeat berry flavor with herbaceous tones. The Pasilla is a chile often used in Mole sauce, it is also considered one of the "Holy Trinity" chiles.
