Description:

Cinnamon is the spicy, heavily scented bark of an Evergreen tree. Once the outside layer of bark is removed, the inside layer can be rolled like a stick. Regularly used as a spice but also as holiday ornaments, a fragrance, a flavoring for gum, in potpourri, in anti-diarrhea formulas and as sweeteners in cough syrups. Cinnamon is native to Sri Lanka and one of the oldest spices in the world. Treasured in the past as a valuable commodity, wars have been fought over Cinnamon. Cinnamon has been used as currency, the Egyptians used it in their embalming process, medieval physicians used it to treat an abundance of illnesses, and some have used it for preserving meat. Today, Cinnamon is an important cooking ingredient; just the mention of its name evokes visions of sticky Cinnamon rolls hot from the oven or a hot cup of steaming cider with a Cinnamon stick propped on the side! Cinnamon 4" stick is a Vera AA stick which denotes a rusty brown semi light tan stick with a faintly sweet and aromatic cinnamon flavor. There are about 180 sticks in a 4.5# bag.

To create a sweet and savory pilaf, cook rice in Cinnamon flavored stock and stir in chopped dried fruit and toasted nuts.

Recommended Preparation Instructions:

Add whole cinnamon sticks to hot drinks. For baking, finely grate or grind in a coffee or spice mill before adding to recipes.
