The Calypso Bean is an exotic and beautiful relative of the Kidney Bean. Our Red Calypso Beans are part white and part red with distinctive markings that curve around the bean. Round and plump, Calypso Beans are about 3/8 inch long with a silky smooth texture and sweet firm flavor making it a delicious addition to pasta salads, soups, casseroles and stews.

The Calypso Bean is a dramatic and beautiful heirloom bean. It is also called a Ying Yang bean because of the stark contrast of black and white that flows along the bean's length. About 3/8 inch long with a silky smooth texture and mild flavor, this bean is sure to look great on any plate.

Cooking Calypso Beans is large quantities of water helps keep them from losing their distinctive coloring. Calypso Beans can be combined with rice to make a unique stuffing for vegetables. Excellent in Poblano stew or bean salad with mango and citrus. Soak overnight; 1 cup dry equals 2 ¼ cups cooked.

Recommended Preparation Instructions:

Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring water to a boil for 3 minutes, reduce heat and simmer, covered, for 30-40 minutes until tender. One cup dry yields 2-1/2 cups cooked. Salt the water to your desired liking.
