Description:

Appaloosa Beans are a hybrid of the Pinto Bean and are related to the Kidney Bean. The Appaloosa Bean is a slender, curved, elongated bean. The front half of the bean is ivory colored and the latter half is speckled with purplish-maroon blotches. This bean is about ½ inch long and the markings are similar to Appaloosa ponies. The Appaloosa Bean was developed in Palouse, the area of Eastern Washington & Northern Idaho. With a flavor that is similar to the Black Bean, Appaloosa Beans are more intense and earthy tasting. They have a granular and woody texture that is particularly good when used in chili or cooked and mashed with cheese and hot sauce and served as a side dish.

Appaloosa Beans are related to the Kidney Bean. The Appaloosa bean is an elegant, elongated bean, about a half inch in length. The front portion of the bean is ivory colored; the other end is speckled with purple and mocha, similar to Appaloosa ponies. Appaloosas have a mild flavor and firm texture. The Appaloosa was cultivated near the Palouse River in the area of Eastern Washington & Northern Idaho. This particular bean can be used in chili, or cooked and mashed and served as a side dish. Use some creativity, and mash with onions, hot peppers and tomatoes.

Suggested Use:

Appaloosa Beans make tasty refried beans and are superior with hot chilies and tomatoes. After soaking, they can be slow cooked or pressure-cooked. 1 cup dried makes about 2 ½ cups cooked. They hold their shape well when cooked. Perfect for chilies, dips, spreads, stews, casseroles and soups. Use anywhere you would normally use a Pinto Bean.

Recommended Preparation Instructions:

Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, reduce heat and simmer, covered, for 50 minutes until tender.

One cup dry yields 2-1/2 cups cooked.
