D'allasandro Gold Summer Truffle peeling is Tuber Bianchetto. Summer Truffles are tuberous fungi that grow underground near the roots of trees. When mature they release spores that have the developed earthy aroma that makes them so popular. The release of these spores is what draws the hogs and dogs used to seek out these delicacies. The use of hogs is risky because of their natural tendency to eat the Truffles after finding them. So dogs are generally used the majority of the time to find Truffles. Our preserved truffles are picked fresh, chipped and preserved in our White Truffle Oil. They are never from the second boiling of Truffles, or from frozen.

White Summer Truffles with grilled sirloin, chowder with White Summer Truffles and White Summer Truffle salad are recipes that will help showcase the flavor of this fragrant tuber. Small amounts of Truffle are delicious in goose liver pate, omelets, soups, sauces, oils, puff pastry and butter. Truffle is particularly tasty in sauces, especially those that uses White Wine or Champagne and are served with pasta.
