White Corn is creamy white in color and when cooked is a soft, firm texture. Corn was introduced to Europeans by Christopher Columbus on his return from the New World. It was originally known as maize. This multi colored corn, was mainly used as decoration, but is now gaining popularity as a useful grain for cooking. These corns add eye appeal and a unique corn flavor to many stews, soups and casseroles.

White Corn can be used to make hearty stews, soups and chowders. White Corn should be soaked overnight and then cooked until tender, this will take a while, a pressure cooker may be used to shorten cook time. White Corn is hearty and delicious in muffins, cold salads and chilies.
Recommended Preparation Instructions:
Soak overnight in water. Rinse corn, place in pan and cover with water. Simmer 2-3 hours until corn ‘bursts’ open. Add salt during last 15 minutes of cooking time. One cup dry yields 2¾ .cups cooked.
