Coconut, just the name itself brings to mind a vision of warm, sandy beaches and tropical aromas! The Coconut is the fruit of the Coconut Palm which is grown throughout tropical areas of the world. Though its name suggests that it is a nut, the Coconut is actually a seed. Coconuts that mature and fall from the tree have a hardened shell surrounding white meat with a hollow center filled with coconut milk. The Coconut Palm is unique in that its flowers have both male and female flowers in the same inflorescence. Almost every part of the Coconut Palm can be harvested for human use. High in saturated fat, iron and phosphorus the Coconut has less sugar and is higher in protein than bananas, apples and oranges.

Sprinkle shredded Coconut on top of iced cakes for flavor and texture or add to your favorite fruit salad. Sprinkle in granola or on hot cereal. Toast Coconut, cool then mix with tempered chocolate and drop in spoonfuls on waxed paper for Coconut Haystacks.
