Description:
Visually stimulating, this deep umber colored bean has splashes of light mocha resembling flames. Tongues of Fire are related to Cranberry Beans and are popular in Italy though the seed was originally collected in Tierra del Fuego, at the tip of South America. Tongues of Fire are about ½ inch long and their color gently fades during soaking. Tongues of fire have a full-bodied flavor and mild texture that is great on its own or as a side dish. They can be used in casseroles, stews, salads, or cassoulettes.

Tongues of Fire beans are related to Kidney Beans. These beans are deep umber, almost burgundy with lighter mocha colored markings which resemble fire flames. Color gently fades during soaking. Tongues of Fire are about 1/2 inch long. They have a fresh flavor and mild texture.

Suggested Use:
Absorbent in flavor, Tongues of Fire soak up the flavor of the savory herbs and spices they are cooked with. Great for use in cassoulettes, vegetables, stews, soups and cold bean salads. Soak overnight. One cup dry equals 2 ½ cups cooked
Substitute: Cranberry beans.
Recommended Preparation Instructions:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, reduce heat and simmer, covered, for 60 minutes until tender. One cup dry yields 2-1/2 cups cooked
