Swedish Brown Beans are related to the Kidney Bean and is used to make the popular Swedish style Brown Bean casserole. Soft chestnut brown in color with a small white-eye, Swedish Brown beans are oval shaped and about 1/3 inch long. The color of the bean appears to radiate from the inside of the bean, making this a striking legume. The Swedish Brown bean has a mild and somewhat nutty flavor. The Swedish Brown bean was introduced by Scandinavian immigrants a century ago and has been used for years in Swedish cooking in stews, salads, soups, bean casseroles and chili.

Savory when paired with bacon, ham, chunks of pork, meatballs, pork sausage, and vegetables. These versatile beans can be used as a sweetened puree with smoked pork or game meats, or served as a side with butter and chopped parsley. One cup dry yields about 3 cups cooked.
Substitutes: Cranberry or Pinto beans.
Recommended Preparation Instructions:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, reduce heat and simmer, covered, for 60 minutes until tender. This bean produces foam, so skim the water regularly and cook with the lid ajar. One cup dry yields 3 cups cooked.
