Description:

Mung Beans are small and ¼ inch round olive green, brown or black in color. The inside of the Mung bean is mustard colored and when husked and split, the green Mung bean becomes known as the Yellow Mung, Mung Dhal. Mung beans are eaten whole, split with skins on, split and hulled as Mung Dhal, sprouted or ground. Mung Beans have a sweet, nutty flavor, soft texture, are easy to digest and low in gas. Mung beans can be sprouted to produce bean sprouts, which contain Vitamin C, not found in the dry bean. Mung beans are the most common beans to be sprouted in Asia, Europe and here in the United States. Mung Beans have a long history in India where they originated though they were introduced to China many centuries ago. Used in Chinese cuisine to make a sweet soup, Mung beans are used in Indonesia to make a popular dessert snack. Mung Bean Flour is used to make Bean Threads or Cellophane Noodles.

This versatile bean is ideal for stir-fry, soups, spreads, beverages and desserts. Mung beans combine well with a multitude of grains and flours, vegetables and greens, tart fruit, and spices and herbs. Commonly eaten raw in salads, after sprouting they can also be used on sandwiches. To sprout, place beans between layers of damp cheesecloth, place in a dark place for about 2 days. One cup dry yields 2 cups cooked.
